Watermelon Tequila Cocktail

Watermelon kicker

Nothing more refreshing than a watermelon based cocktail. But be sure to count them because they will go down like water (pardon the pun). Great for summer days by the pool or a sophisticated evening after dinner refreshment, the watermelon tequila cocktail will surely kickstart the party.

Ingredients

1/4 cup water
1/4 cup granulated sugar
8 cups diced seedless watermelon (1 pound)
1/4 cup fresh lime juice
1 3/4 cups blueberries
3/4 cup lightly packed fresh mint leaves, plus 8 sprigs for garnish
1 1/4 cups tequila (can replace with vodka)

Method

  1. In a small saucepan, bring the water to a simmer with the sugar and stir over moderate heat until the sugar is dissolved, about 1 minute; let the sugar syrup cool.
  2. In a blender, puree the watermelon until smooth. Set a fine-mesh strainer over a bowl and strain the watermelon juice, pressing gently on the solids to extract as much juice as possible. Discard the pulp.
  3. In a large pitcher, combine the sugar syrup with the lime juice, blueberries and mint leaves. Using a wooden spoon, lightly muddle the blueberries and mint. Add the watermelon juice and tequila. Refrigerate until chilled, about 2 hours.
  4. Pour the cocktail into tall ice-filled glasses. Garnish with the mint sprigs and serve.

Finally our new product The Coolballer is live on the US Amazon store. It actually went live two days ago and we have just received our first online global sales. Becky from Austin Texas. Exciting!! Next goal is to get Australian delivery happening, get lots of reviews, do heaps of social and try and manage this business.

Lots to do but I can get addicted to this.

Starting a new business

No longer just a stay at home mum

lindaIt’s interesting how a new year can motivate you to change. I’ve decided to make a change larger than I have before and start a new business.The past 8 years (latest stay at home mum stint) has been very hectic. Raising my children, building and moving into a new home and fortunately, seeing a lot of the world. I have loved being a mum and am very proud of my role which is a role that should be respected more than it is, but that’s another blog post. Now both my girls are at school I’ve decided to give myself the goal of starting my own online business. A business that will still give me the flexibility to be a mum yet provide me with new challenges.

Not having worked professionally for many years, the idea of starting my own business is very daunting. My husband has been a successful entrepreneur and is helping me get it all started and that makes it even more daunting. Sorry babe 🙂

The whole concept all came about when Steve introduced me to an online course that teaches you how to set up your own private label, find suppliers, manage and deliver stock and launch your very own product. The course was extremely helpful and took me through the process step by step and now we are only weeks away from launching our first product – The Coolballer

The Coolballer is a silicon ice ball mold which makes perfect ice balls to keep your favourite beverage cool, make juice popsicles for the kids or add fruit garnishes to create an effective look for your cocktails.  

I’m looking forward to the day when I get my first sale and can’t wait for the challenges and excitement that lies ahead.
